Fruit is predominantly seen as something sweet or deserty. Personally I love adding fruit to savory dishes to make them tangy and delicious. Take this simple recipe for instance. In just a few minutes your meat, chicken or fish dish will go from average to to-die-for.
Makes 4 cups
1 large ripe mango, cut and diced (a heaping cup)
1 medium banana, firm ripe, cut and diced
½ long red pepper, ripe jalapeno or Thai
1 sweet red bell pepper, cored, seeded, cut and diced
2/3 cup cilantro leaves, 1/3 cup minced, 1/3 cup rough chop
½ small red onion, cut and diced
2 tablespoons fresh lime / lemon juice
¼ teaspoon kosher salt or to taste
How to make it:
Mix all ingredients together in a large bowl. Serve immediately, or refrigerate, covered, up to 3 hours.
