Avo & watermelon salad


If you are anything like me, you appreciate healthy meals that can be prepared quickly and easily. This salad has to be one of those interesting mixes that will leave you and your guests longing for more. The beauty is that you can make as much as you like, people will finish your bowl completely. In whatever amounts you’d like, you’ll need:





radish (optional)

red onion, chopped or sliced

mint, sliced or torn

chives, chopped

salt & black pepper


You just cut the first four ingredients into rough one inch cubes, assemble them in any rectangular pattern you enjoy, sprinkle the herbs and red onion on top and finish with salt and pepper.
