- 500g. skinless salmon fillet
- ½ cup psyllium husk
- 1 tsp. grated orange peel
- 4 tbsp. Chopped cilantro
- 1 large organic egg
- 1 orange
- In food processor, pulse salmon, psyllium husk, orange peel, 2 tablespoons cilantro, 1 whole egg, 1/2 teaspoon salt, and 1/4 teaspoon pepper until finely chopped. Form into 9 patties. Cook nonstick skillet on medium 9 to 11 minutes or until golden brown, turning once.
- Combine diced orange, remaining 2 tablespoon cilantro, and 1/4 teaspoon each salt and pepper. Serve with cakes.
