Salmon with Pea Puree

Want to wow your guests with a simple and sophisticated salmon dish? Then look no further. This beautiful combination of salmon and pea puree (and a glass of Chenin Blanc) will beautifully satisfy any palette. Recipe inspired by Anna Williams from Good housekeeping.com

Ingredients

  • 1 c. sliced leeks
  • 1½ c. peas
  • ½ c. white wine
  • ¼ c. water
  • 4 skinless salmon fillets
  • ¼ tsp. salt
  • ¼ c. half-and-half
  • ¼ tsp. salt
  • ¼ tsp. pepper

Directions

  1. Melt coconut oil in saucepan . Cook sliced leeks on medium 2 minutes, stirring. Add peas, white wine, and water; heat to boiling. Reduce heat to medium; simmer 5 to 6 minutes or until reduced by half.
  2. Meanwhile, rub coconut oil on nonstick skillet; heat on medium 1 minute. Sprinkle salmon fillets with 1/4 teaspoon salt; cook 10 minutes or until just opaque in center, turning once.
  3. While fish cooks, puree pea mixture in blender with half-and-half, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Serve with salmon.
